Steeping whole leaf teas-

Optimal steeping time and temperature vary according to the type tea being brewed. In general, follow the recommendations below, but do experiment to suit your preference and particular tea.

Black tea boiling water 5 minutes

Oolong tea 195° water 4 minutes (multiple infusions)

Green tea 180° water 3 minutes (multiple infusions)

White tea 185° water 5 minutes or more

Darjeeling boiling water 3 minutes

Rooiboss boiling water 5 minutes

Herbals boiling water 5 minutes

Iced Tea

We ice almost every new tea that comes into the shop and have made some wonderful discoveries. We hope you’ll experiment too. Add fruit juice or a swizzle stick of fruit. Steep with slices of fresh ginger or a strip of lemon peel. For great flavor and color, steep fresh raspberries with white tea. And let us know what works for you!

Hot brew- Steep in a pot as usual and chill. If you’ll be serving the tea immediately, measure out more leaves to make a stronger brew and pour over ice.

Cold brew- Place tea leaves in a filter bag or infuser and add to a pitcher of water. Place in the refrigerator overnight. Adjust the amount of leaf to your taste.
